"El Azaraque" is located on both sides of the Rio Mundo, 400 meters above sea level with limited rainfall.It also has a special combination of waters from diverse origins:Fresh river water with a large quantity of organic material and subterranean water rich in minerals. Both are mixed in our reservoir. It is precisely the region where we are located that gives it this particular name, considering that Hannibal´s way crosses part of the estate, the route which General Cartaginés took on his way to Rome.
The olives are immediately cold pressed, at most three hours after the harvest. They are conserved in stainless steel drums, with the aim of conserving their organoleptic qualities.
